When viewing a claim, have a little number on the notes tab (like the history and remittance tabs), that shows how many notes have been added. Having a number would remind me to check the notes.

Future consideration
Include the original reference number on the claims report. I have to record this information for a particular insurance and it would be easier if I could run a report that would show these numbers.
